Woodford Reserve Straight Bourbon, 90 Proof Versailles, KY
Woodford Reserve is official bourbon on the Kentucky Derby, so if you want authentic, pop this bottle. Woodford opens with a sweet, nutty aroma full of vanilla, caramel, chocolate, and a touch of fruit and spice. The palate is rich and chewy, offering flavors of toffee, caramel, chocolate, and a hint of citrus, rounded out by some brown sugar and a little black pepper. It finishes smooth, warm, and slightly creamy, with lingering sweetness and a touch of oak and spice.

Pinhook Vertical Series 9 Year Bourbon, 114.3 Proof Lawrenceburg, IN
Why would we put a bourbon from Indiana on a flight about the Kentucky Derby??? Pinhook sources and blends whiskies to release them when they are properly mature similar to pinhooking horses where yearlings are purchased, broken, trained, and sold when ready to race. This release is dedicated to Bourbon War, now 10, who missed the 2019 Derby but did run both the Preakness and the Belmont! This nose opens with a pop of cinnamon, pastry, light oak, subtle syrup, and dark cherry. The palate and finish deliver layered rye spice, dry oak, cinnamon, brown sugar, and a touch of leather and peppercorn, ending with a warm, candy-like spice.

The nose features aged oak, walnut, graham cracker, and a hint of cigar box. The palate highlights barrel char, aged oak, tobacco, and caramel, with a dry finish of black pepper, leather, and lingering spice.
Baby Jane Bourbon, 91 Proof Red Hook, Brooklyn
Made from a blend of Kentucky bourbon and their in-house bourbon distilled using their own proprietary heirloom Baby Jane corn varietal. The nose is light, with honey, summer fruits, and a hint of caramel, though it lacks intensity. On the palate, honey, caramel, apricot, and peach are balanced, with a touch of allspice, leading to a finish with apricot, oak, and a fresh pastry note that adds satisfying intensity.

Let's take the 10 year old Widow Jane and finish it in barrels that held NY made maple syrup… umm…. Yum! The aroma brings to mind sugared pecans, maple, birch beer, and a hint of charred oak. On the palate, you'll find vanilla, burnt sugar, and cinnamon bark, with a finish of brown sugar, shortbread, and mellow tobacco.
